Edmonson's 36th minute opener was cancelled out by Rhun Garner before the break before Rhodri Jones fired the Turfs ahead early in the second-half.
Edmonson levelled with six minutes remaining before completing his hat-trick in injury time as the Cormorants lifted the cup.
